The 'Famiglia Dodi' Balsamic Vinegar of Modena IGP from Dodi is produced in the region of Emilia Romagna.
Since 1891, generations of the Dodi family have carefully passed down their most precious heirloom: the highest quality wood casks for aging balsamic vinegar. 
They contribute to perpetuating traditional methods from the Middle Ages.
This Balsamic Vinegar of Modena IGP is obtained by aging a mixture of cooked grapes must and wine vinegar for a more than three years in large wooden barrels.
This balsamic vinegar is made with carefully selected grapes and has a 1.33 density (velvety and thick). Gently crushing the grape-must guarantees the quality of its unique ingredient
Flavour : Very sweet, very dense, almost syrupy vinegar. Fruity with a well balanced light acidity at the end.

Pairings: It is excellent on steak, salads, cheese, risotto, dessert.
It will embellish all sweet and savoury dishes.

Ideal as seasoning for salads, raw vegetable dips, boiled meats and sauces.
Delicate with fish and meat dishes. A few drops of Riserva di Famiglia add taste to a flake of Parmigiano-Reggiano cheese.
It gives a unique added taste to fruit salads, ice-creams and risotto.
