Caviar d’aubergine is a classic in Mediterranean cuisine.
Pairing the aubergines with truffle, known as the black diamond of Provence, results in a refined, luxurious version of this dish. The variety of Provençal aubergine and the careful preparation of this paste contribute to its highly flavoursome and delicate taste.
The mixture is embellished with the powerful taste of black winter truffle, or Tuber Melanosporum.
The paste can be enjoyed as an original aperitif, on toast, in a verrine with mozzarella or as a starter, spread on a lovely slice of country bread with tomatoes and shaved parmesan on top.

The story begins in 2010 in Aix-en-Provence when Aix & Terra was a small shop in Mirmande, in Drôme Provençale. In it Richard Alibert, a grocer’s grandson born in Marseille, recreated the warm, welcoming atmosphere and aromas of his childhood together with his Spanish wife, Marina from Barcelona.
