Carnaroli is the most prestigious variety of Italian rice, used in every region.
It has a large grain with a high percentage of amylose ensuring low glutinosity and excellent cooking resistance, which are qualities that make it the perfect ingredient for risottos and salads.
The history of Lucedio Abbey is age-old. It was founded in 1123 by the Cistercian monks from Borgogna who reclaimed the land and were the first to introduce rice cultivation into Italy at the beginning of the 1400s.
