For 7 generations, since 1872, Maison Malnou has been growing, drying and smoking chilis in Béarn, in country typical of the South West, amongst vines and orchards in harmony with the sun and wind.

The seeds are sown at the end of February and picked between the end of July and the first frost. The chilis are hand-picked and dried naturally for several weeks.
They are dried using a unique dehydration process developed by Maison Malnou.
They are then smoked in the traditional way for several days using dried fig wood chips which give the chili aromas of toasted cereals, wood and liquorice as well as their intense red colour.
