Over 7 generations, since 1872, Maison Malnou has been growing, drying and smoking chilis in Béarn, in country typical of the South West, among vines and orchards in harmony with the sun and wind.
The seeds are sown at the end of February and picked between the end of July and the first frost.
The chilis are hand-picked and dried naturally for several weeks.
They are dried using a unique dehydration process developed by Maison Malnou which gives the chilis their characteristic aroma of fresh bell peppers, dried tomatoes and hay as well as their orange colour.
