Harvested when the East-Wind blows. A rare salt with a fine grain and naturally pure white.
Also known as “Louis XIV” for its historical presence at the king’s table.

The Binet family, who specialized in salt, have handed down their traditional know-how from one generation to the next. Much like caviar or wine, salt is the opposite of a generic product; it is unique.

It is made by the winds, the sun and the salt workers.

Nothing is left to chance ; from choosing ponds to wind drying methods, at each stage, Edouard Binet and his team observe, taste and select the best salt for Batz Cru and Grand Cru salts.
The very best salt would not be a Cru without the careful handling of each stage of the process of production.
